【摘要】:Thisdocument,partofEN13130,specifiesananalyticalprocedureforthedeterminationofacrylamideinthefoodsimulantswater,3%w/vaqueousaceticacid,15%v/vaqueousethanolandfatsimulant.Thelevelofacrylamidemonomerdeterminedisexpressedasmilligramsofacrylamide/kgoffoodsimulant.Themethodisappropriateforthequantitativedeterminationofacrylamideinapproximateanalyteconcentrationrangeof0,01mg/kgto0,1mg/kgoffoodsimulants.Themethodshouldalsobeapplicabletootherfatsimulants.NOTEThesuitabilityofthefatsimulantshouldbeassessedpriortosettingupmigrationtests-itmaybefoundnecessarytousesunfloweroiloramixtureofsynthetictriglyceridesifunacceptableinterferencesarefoundwitholiveoil.
